Spinach Lasagna

8 oz. cooked lasagna noodles (I use 9 of the regular sized lasagna noodles.. not the wide extra wide kind)
16 oz. cottage cheese
2 c. spinach leaves (shredded)  I pack them in there!
2 eggs, beaten
1 1/2 tsp garlic powder  (I use 3-4 cloves minced fresh garlic)
salt and pepper to taste

1 jar spaghetti sauce (I use hunts spaghetti sauce.)
2 c. mozzarella cheese
The recipe calls for a 9x13 pan.  I use an 8x12ish.  If you use a 9x13 pan, I would cook 3 more noodles and add one to each layer. 
Combine spinach, cottage cheese, eggs, garlic and salt and pepper
Layer as follows:
1/2 c. spaghetti sauce
3 noodles (4 if using a bigger pan)
1/2 spinach mixture
1/2 c. mozzarella cheese
 

1/2 c. spaghetti sauce
 3 noodles (4 if using a bigger pan)
1/2 spinach mixture
1/2 c. mozzarella cheese
 

1/2 c. spaghetti sauce
 3 noodles (4 if using a bigger pan)
remaining spaghetti sauce
remaining mozzarella cheese

*I like to add some Parmesan cheese when I'm feeling fancy. 

Bake at 400 degrees for 35-40 minutes

Karens Chilli Recipe




1 pound ground beef
1 pound Italian sausage (hot sausage for spicy, ½ hot ½ regular for medium spicy and regular for mild)
3 (15 oz.) cans pinto beans drained
1 (15 oz.) can spicy chili beans in sauce
2 (28 oz.) cans diced tomatoes with juice
1 (6 0z.) can tomato paste
1 green pepper, seeded and chopped
1 red bell pepper, seeded and chopped
1 serrano pepper, seeded and chopped
1 jalapeño pepper, seeded and chopped
4 cubs beef bouillon (optional)



1 tablespoon Worchester sauce *little extra never hurts
1 tablespoon garlic
1 tablespoon dried oregano
2 teaspoon cumin
2 teaspoon dried basil
1 teaspoon salt
1 teaspoon ground black pepper
1 teaspoon cayenne pepper
1 teaspoon paprika
1 teaspoon sugar




Joyce's Easy Drop Biscuits


1 C. Milk
1\2 C. Butter (melt 1\4 c. in pan)
1 TBS Baking Powder
1 tsp. Salt
2 C. Flour

Combine ingredients and mix well. Then add flour. Drop biscuits into pan with melted butter. Heat oven to 450 degrees and bake for 10 minutes.

Minestrone Soup



1 lb. Hamburger
3-4 stalks celery
1 large onion
3-4 cloves garlic

Brown hamburger. Then add celery, onions and garlic and saute.

4-5 tomatoes
1 can kidney beans
1 can green beans
1 cup potatoes
1 cup carrots
2 cans beef broth
1/2 can water
2 1/2 TBS. Basil
1/2 tsp. Oregano
Salt & pepper to taste
Combine everything into big pot and bring to a boil. Simmer until vegetables are tender.
